Baked Basil Carrots
Ingredients:
1 pound of organic carrots, peeled and sliced diagonally
Salt to taste
2 tsp olive oil, separated
3 tbsp fresh basil, finely minced
Preparation:
Bake or steam carrots with one teaspoon of EVOO, or until tender, about 7 minutes.
Toss with the remaining ingredients.
Serve and devour.
